Carrot Cake

This is my faaavorite cake, so I made it for my birthday this year! As usual for my dessert recipes, I made it dairy-free, gluten-free, and the sugar is from natural ingredients like honey, maple syrup, and dried fruits such as dates, raisins, cranberries, blueberries, and goji berries that I soaked in water to get them plump and juicy. This recipe can also be used to make breakfast carrot muffins or turned into cupcakes with the cream cheese frosting. Yum!
