Grilled Baja Shrimp

To celebrate Cinco de Mayo, here's a delicious recipe from our Center Green Chef, Matthew Pinter.

Agua de Jamaica or Hibiscus Tea

"Hibiscus can be slightly tart but super refreshing as an agua fresca that is popular in Latin and Caribbean countries as it tends to grow in tropical climates. The first time I had this drink was in Mexico while living and cooking for an intentional community. I thought it was the best drink in the world while it was also one of my favorite times in life so it definitely brings back good memories! I could never recreate it exactly but here’s a simple version which I prefer to keep unsweetened to minimize sugar consumption but you can try adding whatever you like, such as lime zest, mint, clove, or ginger; you could also add some apple slices and a dash of honey for a touch of sweetness. It has a high amount of vitamin C so it’s great for your immune system, which you definitely want during these times."
